Fluffy Cheese! ...

I like saying "Fluffy cheese!"

Just got back from China. No blogging for a week and you give me fluffy cheese. Now, how can I argue with that?

I love my Microplane grater. Genius, that thing.

And the resultant pile of cheese reminds me of a Flokati rug.

My latest Parmesan jag is this:

Into a small bowl, I plop a little glump of mayonnaise, add a splash of Paul Newman's Roasted Garlic and Parmesan salad dressing and a healthy handful of the freshly grated Parmesan and whisk it all together into a dressing which is nearly a dip. Suitable for many things.

At first, I used it atop ripe tomatoes with a hearty sprinkling of chopped, toasted walnuts on top, but I've since branched out and now I do a "salad" of chopped roasted chicken (Ina Garten-style, chicken breasts topped with olive oil and salt and pepper in a 350 oven for 30 minutes, give or take), good tomatoes, chopped English cucumber, the dressing, and the walnuts. Fantastic, if I do say so. And I do.
